Crockpot Cauliflower Pizza

Crockpot + Pizza = Love

When the cold winds of February blow in, with ice and snow, we seek comfort and warmth not only with the sweaters and blankets but our food too.
In an effort to remain consistent to our healthy habits, even when the busyness and tiredness seem to overwhelm - we're fans of letting our appliances do ALL the work for us!!
This recipe is a twist on an old pizza casserole, I made for the boys growing up - but now that they're out of the house it needed a makeover.
Crock Pot - Cauliflower PIZZA Casserole

Makes 6 servings⠀⠀⠀⠀⠀⠀⠀⠀⠀
Ingredients:⠀⠀⠀⠀⠀⠀⠀⠀⠀
🍃2 large cauliflower heads, cut into bite-size florets⠀⠀⠀⠀⠀⠀⠀⠀⠀
🍃1.5 cups low sugar, all-natural marinara sauce⠀⠀⠀⠀⠀⠀⠀⠀⠀
🍃sea salt and pepper, to your taste⠀⠀⠀⠀⠀⠀⠀⠀⠀
🍃1 cup shredded natural mozzarella, divided ⠀⠀⠀⠀⠀⠀⠀⠀
🍃1/2 cup turkey pepperoni, divided⠀⠀⠀⠀⠀⠀⠀⠀⠀
🍃1 Tbsp. dried oregano⠀⠀⠀⠀⠀⠀⠀⠀⠀
🍃1 Tbsp. garlic powder⠀⠀⠀⠀⠀⠀⠀⠀⠀
🍃1 tsp nutritional yeast ⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Instructions:⠀
⠀⠀⠀⠀⠀⠀⠀⠀
In a large bowl, combine cauliflower with marinara, garlic powder, oregano, and nutritional yeast.⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Toss until fully coated then season with sea salt and pepper.⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Place half the cauliflower in the bowl of your slow cooker, and top with half of the mozzarella and pepperoni.⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Add the rest of your cauliflower and repeat the topping process.
Cook on low for 5 hours or on high for 3 hours.
