Carrot Ginger Soup
Carrot Soup to Comfort You

Where are my Seinfeld friends?! No Soup for you!! Joking, of course!
With the cold weather here all I can think of is cute boots + delicious soups.
This soup is so simple + easy to make that you’ll be enjoying it within 20 minutes of prepping it!
Carrot Ginger Soup
Ingredients
6 large carrots , diced
1 medium onion, diced
1/2 inch chunk of fresh ginger, minced
3 cloves of garlic, minced
1/2 tbsp coriander
1/8 tsp nutmeg
Salt + pepper to taste
1 -2 tbsp of Coconut oil
6 cups of water
Instructions:
1. On medium heat, heat coconut oil
2. Add diced carrots, onion , garlic + ginger + all seasoning.
Let cook for 5 minutes
3. Add water + bring to a boil - reduce heat to medium + let cook for 15 minutes or until carrots are tender
4. Remove from heat + add to a high speed blender + blend until you reach desired consistency. May need to add a bit more water
5. Transfer to serving bowl + enjoy!
