Grab + Go Breakfast Bars

Breakfast is everything. The beginning, the first thing. It is the mouthful that is the commitment to a new day, a continuing life. 🙌🏻
An easy breakfast alternative, when I need a grab+ go option in the morning, are these amazing superfood breakfast bars!
The ingredient list of these bars is crammed with healthy whole clean super foods. Don’t forget a superfood is a term used to describe food with a high nutritional content + associated health benefits

Ingredients
Base
2 cups old fashioned oats
1 cup slivered almonds
4 tablespoons honey
1 tablespoon coconut oil
1 teaspoon kosher salt
1 1/2 teaspoon cinnamon
2 bananas
1 1/2 teaspoons vanilla
1 scoop Vanilla Protein Powder - I use
Nuzest vegan vanilla.
Topping
1/2 cup old fashioned oats
1/4 cup slivered almonds
1/4 cup pumpkin seeds
1 cup fresh blueberries
1/4 cup of almond milk
1/4 teaspoon cinnamon
Instructions
For Base
Preheat oven to 350°
Line 9 x 9 baking pan with parchment paper, lightly grease
Add all ingredients in to food processor until completely combined + wet, this may take several minutes
Pour into prepared pan + smooth out until evenly spread
Bake for 8-10 minutes
For Topping
Combine ingredients in medium bowl + stir to combine
Removing pan from oven, spread topping evenly over + lightly press down into base
Bake an additional 15 minute
Store in a refrigerator in a sealed container for one week
