Brussel Sprout Quinoa Salad

Create healthy habits one meal at a time ... Healthy eating does not need to be complicated or boring! It's not just kale + carrots or chicken + cauliflower.
Think about eating the rainbow (colorful fruits + veggies) with naturally added crunch thanks to heart-healthy almonds + brain-boosting brussel sprouts in this quick 4 ingredient salad.
Brussel Sprout Quinoa Salad
1 pound raw brussel sprouts, rinsed, ends trimmed + cut in half then thinly sliced + cut crosswise
2 cups cooked quinoa
1 cup dried cranberries
2/3 cup chopped almonds
Dressing:
1/4 cup orange juice
1/4 cup olive oil
2 Tablespoons apple cider vinegar
S + P
Place dressing ingredients in a small container with lid + shake to combine. Place all salad ingredients in a bowl; toss with dressing. Let sit a few hours or overnight to soften brussel sprouts.
