Easier than Apple Pie

Baked Apple Breakfast

Boring Breakfast got you down?
No, need to stay stuck in the cereal & oatmeal rut when you can bake these stuffed apples in advance.
As easy as a quick reheat, while your coffee brews and you'll be satisfied until lunchtime.
Easier than apple pie & just as delicious.
⠀⠀⠀⠀⠀⠀⠀⠀
Ingredients: ⠀⠀⠀⠀⠀⠀⠀⠀⠀
4 medium apples ⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 1/2 cups water ⠀⠀⠀⠀⠀⠀⠀⠀⠀
1/2 cup unsweetened applesauce ⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 teaspoon vanilla ⠀⠀⠀⠀⠀⠀⠀⠀⠀
1/2 teaspoon nutmeg ⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 tablespoon cinnamon ⠀⠀⠀⠀⠀⠀⠀⠀⠀
4 tablespoons brown sugar ⠀⠀⠀⠀⠀⠀⠀⠀⠀
1/2 cup pecans, chopped ⠀⠀⠀⠀⠀⠀⠀⠀⠀
1/2 cup raisins ⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Instructions: ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Preheat oven 400 degrees ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Pour 1 1/2 cups of water in the bottom of a 8x8 pan ⠀
⠀⠀⠀⠀⠀⠀⠀⠀
Wash and core the apples, leaving some of the bottom intact to hold the filling in. Use a melon baller or similar spoon-type utensil to scoop out a bit of the flesh.

Mix the applesauce, vanilla, cinnamon, brown sugar, pecans, and raisins together and fill the apples with the mixture. ⠀⠀⠀⠀⠀⠀⠀⠀⠀

Bake the apples in a 350°F oven until they are very tender, about 40 to 45 minutes. Start checking at half an hour, and if the liquid has evaporated so much that the surface of the baking dish is dry, add more.
Enjoy as is or add a dollop of Greek yogurt. ⠀⠀
To reheat: Place on microwave safe plate. Microwave 3 minutes or until heated through. ⠀⠀⠀⠀⠀⠀⠀
